Spinach and Turkey Bacon Roll

I'm backkk! I'm so sorry that I haven't posted! Some CRAZY things have been going on at the base where my husband and I are at. Things in which I haven't been happy about. So I wasn't baking! BUT This last Saturday, I had a girls night to attend to, so I made A LOT of things!!

So, Here's the first one!

What you need:
Phyllo Dough or Phyllo Pillow Puffs
8 oz. Garlic Herb cheese spread (OOORR... Mix together softened cream cheese and whatever herbs you would like!)
Parmesan cheese
Either cheddar or mozzarella cheese (which ever is your favorite!)
Minced Garlic (I live for garlic, so I added a lot!)
Fresh Spinach, chopped
Turkey Bacon
 (I made this up in my head, so I'm sorry for not using an exact measurements)

What you need to do:

Thaw out your phyllo dough if you got it frozen for 45 min. 
When thawed, Spread out. 

 Spread out your cream cheese, or garlic spreadable cheese.



 Place your Turkey Bacon on top and evenly spread out!


 Spread out your cheese all over!!


 Place your spinach on top!!


 Roll it up! (I honestly had my husband help me! He got one side and I got the other!)
I made slits across the top and added some garlic butter.



Bake at 400 for 20-35 minutes!

Marble Chocolate Treats

Want to make something super easy and somewhat fast?
This is FOR YOU!


What you need:
Graham Crackers
1 box Semi Sweet Baker's Chocolate
1/2 cup Peanut Butter
1/4 cup shortening
3 Squares Baker's White Chocolate
1/4 cup shortening

What You Need To Do:
Line a 13x9 inch baking pan with foil with ends of foil extending over sides of pan. 
Arrange graham crackers on bottom cutting as need to completely cover bottom of pan, set aside.


 Either microwave or heat on low on the stove semi sweet chocolate, peanut butter and shortening until smooth.
Repeat the melting step with the white chocolate and shortening.

Pour melted milk chocolate on top lined up graham crackers and evenly spread.

Drop dollops of white chocolate on top of milk chocolate.

With a knife, swirl through the dollops to make a marble effect.
Refrigerate for at least 45 minutes. Cut into bars, making squares.
Store tightly in container in the fridge.

This Week's Theme: CARAMEL!



Chewy Oat Brownies


What you need:
For the Filling:
You can make regular brownies for this filling 
or (what I did)
Use a box of brownie mix. 
(I found this brand of brownies that are SO GOOD! So I couldn't resist)

For the Crumbly Topping:
1 cup Whole Wheat or All Purpose Flour
1/2 cup Quick Cooking Oats
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1 Egg
3/4 cup Brown Sugar
1/4 cup Vegetable Oil
1 tsp Vanilla


 What you need to do:
Preheat oven to 350.
Prepare your brownies. 
When well mixed, place in a 9x9 greased pan.

 In a large bowl, Stir together flour, oats, baking powder and soda and salt. Set aside for later. 
Stir together in another bowl all wet ingredients and brown sugar.
Slowly add dry ingredients with wet.
This mix should be moist and crumbly, not really wet.

Place crumble mix on top of brownie mix.
Bake as you would the brownies, as it says on the box, or on 350 for 30-40 minutes. Until a toothpick or knife comes out smooth.

I was going to have this weeks theme be something that you guys voted for, BUT I want to see what everyone made/is making for 4th of July!



I want to see Red Whites and Blues! Flags! Anything and Everything Patriotic!!!!

Caramel Apple Cookies


What you need:
1/2 cup Sugar
1/4 cup Butter
1/4 cup Shortening
3/4 tsp Vanilla
1 egg
1 1/2 cup Flour
1/4 tsp Baking Soda
1 pkg (.14oz) Apple flavored unsweetened soft drink mix
about 12 craft sticks
24 Caramels

What you need to do:
Preheat oven to 400.
In bowl, mix together sugar, butter and shortening with electric mixer. Stir in vanilla and egg. 
Stir in flour, baking soda, salt and soft drink mix.

On a floured counter top, roll dough 1/4 in think and cut with 3 in round or apple shaped cookie cutter.
On a cookie sheet place cut outs 2 inches apart and insert the craft sticks.

Bake 6-8 minutes until golden brown. 
Let cool.

Melt your caramel in a saucepan with 2 tbsp of water, stirring constantly.

DO NOT DIP COOKIE! Spread on your caramel with a spoon on about 2/3 of the cookie.
Allow glaze to drizzle. 
Let it firm.

Cran and Blueberry Cookies

I decided not to do anything obvious for the 4th, so I made these cookies.
Red cranberries
Blue blueberries

Festive!

What you need:
2/3 cup Margarine
1/3 cup Powdered Sugar
1 tsp Ground Ginger
1/2 cup Cranberries
1/2 cup Blueberries
2 tsp Granulated Sugar

What you need to do:
Preheat oven to 350.
In large bowl, mix butter, sugar, and ginger and stir in berries and flour.
On a cookies sheet place your dough and pat it down 

Sprinkle your sugar on now.
Bake about 20 minutes until golden brown around the edges.
Cool 10 minutes.
Slice with a long knife or pizza cutter into pieces.

Lemon Truffles

So I decided to make a different kind of truffle, and who doesn't like Lemon??

What you need:
1 pkg (8 oz) Philly Cream Cheese
1 (16 oz) Box of Lemon Cookies
6 Semisweet Baking White Chocolate
1/3 cup Shortening
What you need to do:
With an electric mixer, beat your cream cheese to make fluffy. 
Add in your either already crushed cookies or add them in whole if your mixer can handle breaking them.
When mixed thoroughly, with a cookie scooper, make your balls.
I personally, like to scoop them to get the right size, then roll them with my hands to smoothen them out.
Melt your white chocolate and mix in your shortening until blended well together. 
Dip your truffles and set to dry. 
**Optional**
With the leftover white chocolate, I put in a squeezy bottle and added a bit of yellow dye and some powdered juice mix with lemon flavoring, mixed it together and drizzled on top of the truffles.

Set in fridge to dry.
