Scones are pretty much a staple here in Australia. We have them a lot for morning and afternoon tea and serve them plain with cream and jam, with sultanas (raisins), dates, made with pumpkin or sweet potato or savoury with cheese, bacon, herbs etc. The secret to a light fluffy scone is not to overbeat it and to cook in a hot oven.
I have a recipe on my blog for Blueberry Scones using Alton Brown's recipe. They are fantastically moist and fluffy and really delicious. http://sweet-as-sugar-cookies.blogspot.com/2011/01/blueberry-scones.html

Try this recipe...I found them extremely easy to make and it's WW friendly, which is always a bonus in my book! :)

Don't overwork your dough...its ok if it doesn't look completely mixed when you shape it. Good luck!
