Truffles

EASY Easy easy Truffles!
I've had many truffles in my day, nice and expensive ones and only okay ones, but this recipe is affordable, DELICIOUS and easy and considering that they are made from Oreos and cream cheese the taste is HIIIIIGH up there!

What you need:
1 pkg (8 oz) Philly Cream Cheese
1 (16 oz) Box of Oreos
6 Semisweet Baking Chocolate

Thats it!

What you need to do:
In a mixer, Bring together Oreos and Philly Cream Cheese.
Mix well, until smooth.

Using a cookie scoop, scoop out balls and place on wax paper. 
Now, You can leave them like this and pour chocolate over them or dip them
OR
You can roll them even tighter to make a perfectly formed ball (I personally think it looks better this way)

Using either method you like the best dip in chocolate and place in fridge for 2 hours
(TIP: To make those 2 hours turn into 30-40 min: When melting your chocolate for dipping, add in some shortening. This will firm up the chocolate and make firming time shorter!)

 From here you can make different types of truffles! 

 From Left to Right: Peanut Truffle, Regular Chocolate Truffle, Powdered Sugar Truffle, Coconut Truffle, and Lastly the Cocoa Truffle.
 This is the Peanut Truffle. 
What I did was Mix in some coarsely chopped peanuts into the Oreo mix then dipped them. Then I finely chopped some more peanuts and sprinkled it on top of the truffle.

 This is the Coconut Truffle. 
To make it is the same concept as the Peanut Truffle. 
Course Coconut pieces inside the Truffle and fine pieces on top.

 This is the Cocoa Truffle. 
This one you DO NOT DIP! 
You drown it with cocoa powder shaking the excess off with a spoon.



 This is the Powdered Sugar Truffle. 
Same concept as the Cocoa Truffle.
Do not dip in chocolate, drown it with powdered sugar!

Super easy, Super elegant, SUPER TASTY!

Ok, Now that business it out of the way, What is our theme???
Citrus!
This includes: Lemon, Lime, Orange, Grapefruit, and any combination of the four! 
Drinks, Desserts, baked goods, Etc!


Chicken and Rice Casserole

Chicken and Rice Casserole
I didn't think that this recipe was very southern-y, but it was in the cook book, So I made it. 
After grocery shopping and being SOOO hungry I just made the fastest recipe I had in the collection.


What you need: 
  • 2 TBSP Butter
  • 1 Medium Onion
  • 2 cups Rice, Cooked
  • 2 chicken breasts, chopped and cooked
  • 1 1/2 cups frozen sweet peas
  • 1 cup Carrots, peeled and chopped
  • 1 cup Corn
  • 1 1/2 cups Sharp Cheddar Cheese
  • 1 cup Sour Cream
  • 1 can Cream of Chicken Soup
  • 1 4 0z Jar of Pimientos
  • 3 cups Ruffels
What to do:
 Chop up you chicken and cook it. Any way you'd like. I boiled it in some flavored water (garlic, pepper and salt).
Chop up your carrots and pan fry them until tender. Sautee onion, then add peas and corn.


In a bowl, Mix your cooked rice, cooked chicken, veggies and sour cream and cream of chicken soup. 
Add in cheese.

Put into pan and crumble some chips on top!
Bake at 350 for 20-30 minutes.

I LOVED making these!

They are so easy to make!
Use your favorite brownie batter mix, Which I use this.
Pour some batter in this here mold,
Bake at whatever temp and how ever long, and presto!
you can decorate however you want!
I drizzled some peanut butter on them.

If you do not have this mold, and you love brownies, YOU MUST GET IT!

SOUTHERN WEEK

Yes, I am doing it! 
I bought this southern cook book. My husband is from the South. 
He BEGGED me to make a few things from this cook book!
So, I'm going to have fun with it!
I'm doing a southern style dinner every night this week and you get to tag along!

So what exactly is on the agenda from this Wednesday night to next Wednesday night?
Well, In no exact order:
  • "Baked" Potato Soup
  • Hot Fudge Brownie Cake
  • Three Cheese Pasta Bake ( Ididn't really feel like this was very southern-y, but I needed another meal!)
  • Corn Pudding
  • Chicken fried steak or chicken
  • Perfect Mashed Potatoes
  • Mama's Fried Chicken (of course)
  • Baked Mac and Cheese
  • Hash Brown Cassarole
  • Cheesy BBQ Sloppy Joes
  • Chicken and Rice Cassarole
  • Buttermilk Biscuits
AND...
  • Chicken Pot Pie

I will be posting ALL of these delicious recipes and of course with my own spin to it! : P
P.S. My husband and I don't like collard greens and okra, so we're not having any of it. (Sorry)

Peanut Butter and Jelly Cupcakes

Ok everyone, meet Tracey.
She is my buddy and a guest baker! How exciting!
She got to choose what we are making. 
She saw a recipe for Peanut Butter Cupcakes form Cupcakes, Cupcakes and more Cupcakes by Lilach German and so we had to make them, whilst making them our own of course!

Ok, so Peanut Butter and Jelly cupcakes. What you need:
4 2/3 flour
4 tbsp baking powder
1/2 tsp salt
2 sticks of butter
2 2/3 sugar
3/4 cup peanut butter
4 eggs
1 cup milk
4 tbsp jam (Which ever you like)

Frosting:
1 cup peanut butter 
4 tbsp honey
4 tbsp milk
4 oz cream cheese
and some more jam
What you need to do:
Preheat your oven to 325.
Mix your dry ingredients together in a bowl.
In a mixer cream butter, sugar, and peanut butter until fluffy.
and eggs one at a time, while mixing still.
Gradually add dry ingredients.
Add milk until smooth.
Add jam with a spoon, not thoroughly so chunks of jam remain.
 Bake for 23-25 minutes.
Cool for 10 min.
Preparing your frosting: 
Mix together all ingredients except jam.
Place a little helping or a dollop of frosting on top of the cupcake.

Place a spoonful of jam on top of the peanut butter frosting!!!

TA DAA! Super easy, Super fun, great classic with a sweet twist for anyone, young or old!
