This is a copy cat of Chili's promotional Honey Chipotle Quesadillas. This goes great with a side of Avocado Ranch to dip into!
What you need:
-4 Flour Tortillas
-2-3 Chicken Breasts
-1 Onion
-1 Red Pepper
For the Marinade: (Inspired from HERE)
-1 cup Light Corn Syrup
-1/4 cup Barbecue Sauce
-3 tbsp Orange Juice
-1/2 tsp Salt
-1/4 cup Honey
-1/2 tsp ground Cayenne Pepper
-Chipotle Pepper, website said a pinch (which I think is ridiculously under doing it, considering it is a CHIPOTLE Quesadilla) but I put 1 tsp, if not more.
-2 drops lemon juice
What you need to do:
Marinade your chicken for max 6 hours and min 30 min. Saute in a big skillet with your peppers and onions.
(This marinade makes a lot, so I boiled the chicken in the marinade for a while, until chicken is done. Then poured out excess into a container and saved it for another time)
Spray your skillet or place some butter down and crisp the tortilla. Sprinkle some Monterrey Jack Cheese, Pepper Jack, or Cheddar on the tortilla and add chicken mix. Add more cheese on top and fold tortilla in half. Cut your tortilla in pieces and Enjoy!!
