Cookie Monster Cupcakes (Not the best)

So, I just saw a picture of these today and decided to do them... Only problem: I make my own frosting and today it would not come out thick enough. No matter how much powdered sugar I put in it! Usually, it's not a problem... I'll have to use store bought ones next time. Anyways, since I'm so disappointed in them I'm just going to show a picture, not a tutorial.



 They are supposed to be "fluffy" and the frosting just kept sliding off!
I'm sorry they look horrible, I'll have to re-post if and when I make them again!

What I Actually Made at Work Today!!!

Yes, This one WAS indeed for today!
Customer came in wanting a birthday cake for his daughter, Lily.
She wanted a big ol' rainbow in the background, so I did!
I actually really liked this cake!
Except I made one mistake that my supervisor is going to have to fix in the morning, since I don't work tomorrow.... I forgot the dot on top the "i" so it looks like an "e"... Sigh
What do you think?


What I made at work, Retirement Cake

I have mixed feelings about this one. 
I didn't have much free reign, The customer wanted in big letter QUITTER in orange and a yellow lining around it. 
The lining was what screwed me up. I think it could have gone without.
Thoughts?

What I made at work, Cars Cake

I know I'm not the best at writing on cakes, but I'm trying to get used to it and not get too nervous when actually writing. Any advice?

I've made quite a few cakes at work and I never posted them! So, now I'll post all of them!

Jalapeno Chedder Corn Bread

I've been craving these for a while, So I whipped some up and of course had to make some changes along the way! Gotta make it your own!



What you need:
1 1/2 cups cornmeal
1/2 flour
7 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1 cup milk
1/4 cup Vegetable oil
1/4 cup jalapeno peppers,  finely chopped
1 cup sharp cheddar cheese
1/2 cup cheddar cheese, for garnish

What you need to do:
Preheat oven to 400


Mix together all dry ingredients together in a bowl, stir to rid of lumps.


Stir in another bowl, eggs, milk and oil.

Slowly add in your wet mix in your dry mix, while stirring.

Once mixed until smooth, add Jalapenos.

And your cheese

Pour into cupcake pan or regular pan.

Bake at 400 for 12-15 minutes. Poke it with a toothpick to see if it comes out clean.
Once done, place a pinch of cheese on top!


Enjoy!
P.S. I added a bit of honey on top, really made the jalapenos pop!

Sorry, I was not able to post earlier! I was working all day long! It was a very long day... Onto my wish list!





I am out to make the perfect macaron! I made one before, but it came out looking... I don't know how... Check it out HERE ... doesn't look like this photo, does it?
Tips? Advice? Perfect Macaron recipe? Anyone?

Peanut Butter Granola Bar Cookies

Super (and by super, I mean SUPER) easy to make! Great alternative to plain ol' peanut butter cookies!



What you need:
1 box of white cake mix
1 stick of butter
2 eggs
4-6 sweet and salty peanut butter granola bars
1/2 cup peanut butter chips
1 1/2 tsp shortening

Preheat you oven to 350.
In a mixer, mix together cake mix, butter, and eggs until smooth.
Using a tsp or a cookie scoop, drop some 2 inches apart.
Bake 10-12 minutes.
Let cool for 10 minutes.
Move to a cookie rack and cool completely for 20 minutes.


Since I do not have a microwave, I used a small pot to melt my peanut butter chips on low. I added a tiny tsp of creamy peanut butter so it wouldn't burn and added the shortening. 

Grab your self a cup and put a zip lock baggy inside of it and wrap the edges around the lip of cup.
Like so.

Whether using microwave or stove, Pour in zip lock baggy. 
Cut a tiny hole on the corner and drizzle some melted peanut butter on the cookies.

Let dry. I placed them in the fridge for just 5 minutes.

Next time, I think I'm going to do some peanut butter drizzle and some chocolate drizzle to go with it!

Apple Cupcakes

Ok, I made these simple and awesome cupcakes a while back before I had a blog, but I wasn't able to take many pictures of how to do it! So here it is!

What you need:
Cupcakes, already  prepared
Small Powdered Donuts
Red Frosting
Red Crystal Sprinkles
Tootsie Rolls
Green Laffy Taffy's 

Whip up your red frosting.

Place a little bit of frosting on you cupcake, enough to make your donut stick.

Kitty decided to help, too!

Place your donut on your cupcake.

Frost your donut.

Make an indent on the top of your donut.


 
Should look somewhat like this.
Dip in red sugar. 
Out of you tootsie roll, make a stem and make a leaf out of you green laffy taffy.

Pretty easy, pretty quick, great for birthdays, barbecues, any occasion, really!

Summer Classic... Banana Split!

It can't be summer without a classic Banana Split!


Suggested Items:
Ice cream - pick your favorite flavors
Syrups
Crushed nuts
Crushed fruits
Artificial Cherries
Chocolate or multi-colored Jimmies
Annnnd.... A MUST:
Bananas!

What to do:
Simple!
Split your banana in half and place one half on each side of a bowl or a banana bowl.
Place 2 to three scoops of ice cream in between the two banana halves.
Note: I chose an ice cream that had three different flavors: Milk, dark, and white chocolate.
Ad what ever toppings you like!
