A Themed Baker's Sunday # 26

This is why I don't like the random theme; it's so hard to pick the winner!!! But sometimes I'm just too lazy to come up with a theme. 
After sitting here for an like an hour. I finally chose what I thought was best photographed, best explained and what I would love to bake and mostly what I would love to eat the most and I came up with:

Ok Our new theme.

Homemade White Bread

 Great for sandwiches!

What you need:
5 1/2 cups All-Purpose Flour
2 1/2 tsp Salt
2 tsp Sugar
5 tbsp Butter
2 1/2 tsp (1 Envelope) Active Dry Yeast
2 /2 cup Warm Water

What you need to do:
1. Combine flour, salt, and sugar in a bowl and mix well.
2. Cut butter into 8 slices and add each piece and mix until clumpy.
3. Whisk yeast into water and add into mixture until dough-y. Let sit and cover for 10 minutes.
4. Mix once more and cover again for 30 minutes to an hour until it has doubled.
5. Lightly flour a surface on a counter, and place ball of dough on surface. 
6. Split dough in half. Form both balls of dough into ovals and place into lightly greased and floured loaf pan. 
7. You can make slits on top, if desired.
8. Bake at 400 degrees for 25 minutes or until crispy and golden on the outside and soft and fluffy on the inside.
9. Let cool for about an hour.
10. Cut into sandwich size slices and eat with your favorite fillings!!

Homemade Tortillas


My husband and I were home one lazy day and we wanted something fresh with chicken and veggies, nothing too heavy. We decided we wanted wraps, we had black beans, corn, peppers, onions, chicken, sour cream and some homemade Honey-Chipotle sauce I had made earlier, but only one tortilla. So I decided to whip some up. (Plus, I would like to make all my breads, tortillas, etc.)

Layer between pieces of waxed paper or paper towels; keep warm.

Garlic Knots (Garlic Lover's Version)


This recipe was inspired by Zoom Yummy


What you need:
3 cups Bread Flour
1 tbsp Granulated Sugar
2 tsp Instant Yeast
1 1/4 tsp Salt
1 tsp Oregano
1 tsp Basil
1 tbsp Granulated Garlic
2 tbsp Olive Oil
1/4 cup Milk
1 cup + 2 tbsp lukewarm Water
1 tbsp Minced Garlic

Topping:
1/4 cup Butter
1 tsp Granulated Garlic
1 tsp Minced Garlic
1 tsp Italian Seasonings

What you need to do:
To start, place the dry ingredients (flour, sugar, yeast, salt, garlic and herbs) into a bowl and stir them to combine.

2. Then add the wet ingredients (olive oil, milk, water and garlic) and stir again just to combine.

3. Now, using the dough attachment of your electric mixer, mix the dough for about 8 minutes.

4. Transfer the dough to a lightly oiled bowl, turn once to coat and cover with a plastic wrap.

5. Allow to rise for about 1 hour, or until doubled in bulk.

6. Turn the dough onto a very lightly floured surface and divide it into 8 equal pieces.

To do that I used a knife. I first divided the dough into halves. Then I cut each half into halves again so I had 4 pieces. And finally I cut each piece into halves again which resulted in 8 equal pieces.
(I personally think that they can be cut once more each ball, because these rolls turned out pretty big)

7. Use the palms of your hands to roll each ball into a 10-inch (26 cm) long rope.

If the dough is too sticky then use a little flour to dust it with. The ropes can’t be sticky because you wouldn’t be able to form the knots.

8. Now tie the rope into a knot.

9. Take the end lying underneath the knot and bring it over the top, tucking it into the center and take the end lying over the knot and tuck it underneath and into the center.



10. Transfer the knots on a baking sheet lined with parchment paper and cover with a clean kitchen towel.

11. Let the knots rise for another 45 minutes.

12. In the meantime you can prepare the glaze.
Melt the butter and press the garlic into it.
Instead of pressing the garlic through the press you can just mince it finely.

13. When your knots are nice and puffy…
…brush the glaze onto them.

 16. Place the knots into a preheated oven (350 °F – 175 °C) and bake for about 15-18 minutes.

You can make these to escort just about anything, but I made it to go with my Minestrone.

Baked Egg Boats


Makes 4

What you need:
4 demi sourdough baguettes
5 eggs
1/3 cup heavy cream
4 ounces pancetta, finely chopped and fried until crisp
3 ounces gruyere cheese, grated
2 green onions, thinly sliced
salt and pepper to taste
(I added broccoli and red peppers.)

What you need to do:
1. Preheat oven to 350 degrees F.
2. Cut a deep “V” through the tops of each baguette until about a 1/2 inch to the bottom. Partially unstuff the baguettes. Set aside.
3. Place the eggs and cream into a mixing bowl and lightly beat together. Whisk in the remaining ingredients and lightly season with salt and pepper.
4. Divide and pour the mixture into each baguette boat and place onto a baking sheet.
5. Bake for 20 to 25 minutes or until golden brown, puffed and set in the center. Season with salt and pepper.
6. Allow to cool for about 5 minutes, cut and serve.


Honey Infused Corn Bread

I got this recipe from HERE and made my own version!

What You Need:
2/3 cup butter or margarine, softened
1 cup sugar
3 eggs
1 2/3 cups milk
2 1/3 cups all-purpose flour
1 cup cornmeal
4 1/2 teaspoons baking powder
1 teaspoon salt
1 Small Container of Honey (preferably one that has a long tip)

What to do:

In a mixing bowl, cream butter and sugar. 

Combine the eggs and milk. 

Combine flour, cornmeal, baking powder and salt. 

Add to dry mixture alternately with egg mixture.

Pour into a greased 13-in. x 9-in. x 2-in. baking pan. 
This is the most important part (and of course I forgot to take photos):
Before putting this in the oven, take your container of honey and insert the long pointed tip into random places in the corn bread. I put just a squeeze every 2 inches from each other. 

Bake at 400 degrees F for 22-27 minutes or until a toothpick inserted near the center comes out clean. Cut into squares; serve warm.

Jalapeno Chedder Corn Bread

I've been craving these for a while, So I whipped some up and of course had to make some changes along the way! Gotta make it your own!



What you need:
1 1/2 cups cornmeal
1/2 flour
7 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1 cup milk
1/4 cup Vegetable oil
1/4 cup jalapeno peppers,  finely chopped
1 cup sharp cheddar cheese
1/2 cup cheddar cheese, for garnish

What you need to do:
Preheat oven to 400


Mix together all dry ingredients together in a bowl, stir to rid of lumps.


Stir in another bowl, eggs, milk and oil.

Slowly add in your wet mix in your dry mix, while stirring.

Once mixed until smooth, add Jalapenos.

And your cheese

Pour into cupcake pan or regular pan.

Bake at 400 for 12-15 minutes. Poke it with a toothpick to see if it comes out clean.
Once done, place a pinch of cheese on top!


Enjoy!
P.S. I added a bit of honey on top, really made the jalapenos pop!




Roasted Garlic and Red Pepper Bread Roll

I'm experimenting with bread and kinda threw this together and will probably perfect it later on.




What you need:
  •  2 heads of garlic, roasted
  • 1 package active dry yeast
  • 1 cup warm water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2-1/2 to 3 cups all-purpose flour
  • 1 tbsp basil
  • 1 tbsp Italian seasonings
  • 1 tbsp thyme
  • 1/2 tbsp rosemary
  • 1/2 tsp salt
  • 1 tsp olive oil
  • 2 tbsp Parmesan cheese
  • 2 tbsp Romano cheese
  • Roasted red pepper
What you need to do:
  1. Roast your heads of garlic. I broiled them at 525 for 20-25 min, basically enough time to let my bread rise.
  2. Desolve your yeast in the warm water.
     3. Add the sugar, salt and 1 cup flour; beat until smooth. Stir in enough remaining flour to form a soft dough. 



      4. Let your dough rise for 20-25 minutes.
     5. While the read is rising, make your inner mix. Squeeze out all the roasted garlic, which should be soft by now. Add in a bowl, with all the seasonings and olive oil. Set aside.
6. Once dough has been doubled in size,
cut in half and spread one half out.

     7. Once, made into somewhat of a rectangle and about a half inch thick, divide your garlic mix and spread one half on your spread out dough.

8. Sprinkle on some Parmesan and Romano cheese, however much you want, really. 
 9. Start rolling. If you want the Red Peppers in it, place in before your roll.
10. Make slits in if you want.
11. Bake on aluminum foil at 375 degrees for 25 minutes until golden on top.
