Chipotle Steak Nachos

These nachos are SO delicious! They're great for an appetizer or as a meal!

Marinade for the steak:
  • 1 tbsp olive oil
  • 2 tbsp minced Garlic
  • 1 tsp chili powder
  • 1 tsp brown sugar
  • 1/2 tsp salt
  • 1/2 tsp chipotle chili powder
  • 1/4 tsp ground cumin
  • 1 1/2 lbs skirt steak
For the Salsa:
  • 2 ripe avocados, diced
  • 2 ripe Roma tomatoes, diced
  • 1/3 cup red onion, chopped
  • A pinch of cilantro leaves
  • 2-3 pickled jalapeno peppers, minced
  • 3 tbsp fresh Lime Juice
  • 1 tbsp minced Garlic
  • Half a Red Pepper
  • Salt
Extra:
  • 1 bag tortilla chips
  • 1 can pinto or black beans
  • Mexican cheese

1. In a small bowl, mix all the marinade ingredients. Marinade for 30 minutes and grill.

2. In a medium bowl,  mix all salsa ingredients together. sprinkle salt over it.

3. Once the steak is done, chop into bite size pieces.

4. Prepare and enjoy!
