Red Velvet Memorial Day Whoopie Pies

Well, Everyone else was making something for memorial day, so I wanted to join in on the fun!

These are super easy to make and super fun as well!

What you need:
1 Red Velvet Cake Box (Yes, I copped out)
2 eggs
1 stick butter
4 oz cream cheese
1 tsp vanilla

What you need to do: (Super easy)
Mix everything together!! (See?)
Heat at 350 for 10-12 minutes

Let cool, completely.

Lay upside down, 2 cookies.

Fill with frosting, starting from inside to out.

I did some in blue...

....and in white.

Holding sideways, dip and roll into sprinkles.

And presto you're done!

Breakfast Enchiladas

 Serves 2-4 people, depending how hungry you are, I guess.
What you need:
  • 1 Russet Potato,Cubed
  • 1/2 cup onion, chopped
  • 1/2 cup Red Pepper, chopped
  • 1/4 cup Turkey Bacon, chopped
  • 5 Eggs
For the cheese sauce:
  • 1/4 cup Mascarpone or cream cheese
  • 1/4 cup Romano cheese, shredded
  • 1/4 cup Asiago cheese, shredded
  • 1/8 cup Provolone, shredded
  • 1/8 cup Mexican cheese, shredded
  • 1/4 cup milk
Extras:
  • 1/4 cup salsa
  • 2-4 Tortillas
 1. In a skillet (I used an electric skillet), pan fry your potatoes until about done. Season them how you want. I used some salt, pepper, and some minced garlic. Add chopped turkey bacon.
 2. On the side of the electric skillet, saute your onions and red pepper. Add in potato mixture once warmed.


3. Whip up your eggs, adding a little milk if desired and add into potato mix. 



4. While the egg/potato mix is cooking, warm up your cheese on low heat. Adding in milk. I also added in some herbs such as basil, thyme, and oregano. 


5. Pour your salsa on the bottom of the pan, for more flavor and so it won't stick to the pan.


6. Wrap up your egg mix in a tortilla. (Warning: Don't over stuff your tortillas, note, My tortilla ripped because of this. it made it harder to fold.) And place in pan.

7. Pour your cheese mix on top of the tortilla wraps and place in oven. Heat at 350 for about 10 minutes, checking in on it. 

8. Cheese should be melted and tortillas should be soft. 



9. Enjoy!

My First Award



I received my first award today! How exciting! Thanks so much, Jeanie from The Tasty Cheapskate.

Here are seven things about me:
1. I'm married to a guy who is unlike any other guy. We are kids together and always will be. When we were engaged some of my family was a bit skeptical because of this reason, but I told them: Joe is the person for me, he makes me laugh more than anyone I know (which is so great for me because I used to be so depressed) I'm so happy when I'm with Joe. Even when I'm mad at him, I'm still happy when he's around. He brightens my life and in so many ways he doesn't even know, I'm sure he has saved my life. I love you, Joe.

2. I have 2 dogs and a cat. Cocoa, a wiener dog I've had for 5 years now and is my baby, Triskit, a yellow lab mix puppy who we just got in February, and Sherbert A.K.A Kitty who is a fluffy, orange cat who is very talkative and eats anything from spaghetti to popcorn (if it falls on the floor, we don't purposefully feed him junk.) except for kitty treats. He is a very strange kitty.

3. I have a BA in psychology with a minor in sociology. I love psychology, I love how the mind works, but its also a depressing field, which as I said before, I used to be very depressed, so I wanted to go in a different direction: Baking! I love baking, obviously. I love trying out new things and seeing how well people like them.

4. I never eat my own baking. I just don't have much of a sweet tooth anymore. Every once in a while I'll eat them, but not so often.
5. Ummm... Running out of things to say.... I love the smell of rubbing alcohol. No, really I do! LOL.

6. I've been to Brazil and El Salvador on mission trips.

7. My best friend in the whole world is my mom. We're very close, even though she lives in WA and I live in NM. :(

Classic Apple Pie
I've made a Rustic Apple Tart a LONG time ago, but never an apple pie.
I'm not big on cooked fruit, but my husband loves apple pie, so of course I MUST find a god recipe.

Cake Roll
More specifically a Red Velvet cake roll. 
I've attempted 3 times and they rip and fall apart each time.
I know how to do it, I've seen multiple videos and read a lot of tips, I just don't know what I'm doing wrong.

Chipotle Steak Nachos

These nachos are SO delicious! They're great for an appetizer or as a meal!

Marinade for the steak:
  • 1 tbsp olive oil
  • 2 tbsp minced Garlic
  • 1 tsp chili powder
  • 1 tsp brown sugar
  • 1/2 tsp salt
  • 1/2 tsp chipotle chili powder
  • 1/4 tsp ground cumin
  • 1 1/2 lbs skirt steak
For the Salsa:
  • 2 ripe avocados, diced
  • 2 ripe Roma tomatoes, diced
  • 1/3 cup red onion, chopped
  • A pinch of cilantro leaves
  • 2-3 pickled jalapeno peppers, minced
  • 3 tbsp fresh Lime Juice
  • 1 tbsp minced Garlic
  • Half a Red Pepper
  • Salt
Extra:
  • 1 bag tortilla chips
  • 1 can pinto or black beans
  • Mexican cheese

1. In a small bowl, mix all the marinade ingredients. Marinade for 30 minutes and grill.

2. In a medium bowl,  mix all salsa ingredients together. sprinkle salt over it.

3. Once the steak is done, chop into bite size pieces.

4. Prepare and enjoy!

How to package your goodies

How to Ship Cookies:

  • Try to bake your cookies within 24 hours of shipping.

  • Let cookies cool to room temperature before packaging.

  • Place cookies in an air-tight container.

  • Put waxed paper or parchment between each layer of cookies to keep them from sticking to each other. (I just recycled the parchment paper I baked the cookies on for this.)

  • If cookies don't completely fill the container, add shredded or crumpled waxed paper, parchment paper, or cupcake liners to fill the gap.

  • Place container in a shipping box with 2-3 inches of packing on all sides to keep cookies from breaking during shipment.

  • If shipping the next day, freeze your box of cookies overnight to ensure freshness longer. If you're shipping during the cold-weather months, that will help, too.

  • Mark the box FRAGILE.

  • It's best to send your cookies on Monday or Tuesday to ensure the cookies don't sit in a post office or warehouse over a weekend and start to get stale.

  • I recommend USPS Priority Mail (2-3 day delivery) as a fairly fast and economical shipping method.

How to ship Cupcakes:
The answer is to use half pint mason jars as your cups! 

The mason jars are oven safe - you can bake your cupcakes directly in the jars.  Put 1/4 cup of batter in the jar - leaving room for plenty of frosting - and place the jar directly onto your oven rack (make sure the lid isn't on!).  Bake just as you would your regular cupcakes. 

When the cupcakes are out of the oven, wait for them to cool and frost them (most frostings will work, although I wouldn't recommend using whipped cream because it doesn't freeze as well). Then, seal the jars and freeze them.  Once they are frozen solid, decorate the jars however you like (ribbons and gift tags work well), pack them well (broken glass is worse than smooshed frosting), and ship them next day air.  If you are shipping them somewhere warm, you might also want to include an ice pack in the box to ensure that they stay cool during their travels.
